CURRIED CAULIFLOWER SOUP

What can be more fun than finding a delicious soup recipe that is super easy to cook? Here’s the curried cauliflower soup with hint of spice and that feels smooth and lustrous. So take a look at the recipe and enjoy the yummy treat.

Ingredients:

  • About 1 tablespoon of butter (unsalted)
  • A tablespoon of diced and fresh ginger
  • 2 cups of vegetable stock
  • 1 tsp of garam masala
  • About 3 each diced garlic cloves
  • About 1 tsp of turmeric
  • 1 tsp of cumin seed (Grounded)
  • 1 tsp of coriander seed (Grounded)
  • 1 tsp of chili flakes
  • About ¾ head of a large cauliflower. Have it chopped
  • About 1 each 13.5 ounce can of coconut milk
  • A tsp of lemon juice
  • Some salt and pepper

Garnishing Ingredients:

  • 1 tablespoon of butter (unsalted)
  • 6 sprigs of cilantro leaves
  • About 1 tsp of fresh and sliced ginger strips
  • ¼ head of a large cauliflower
  • Some salt and pepper

 

Method:

  • First of all preheat the oven to about 350 degrees
  • Now place a medium sized soup pot over medium heat
  • Then add the butter to the pot
  • To the pot add the garlic, ginger and spices. Stir them all together for about 3 minutes
  • Now take the cauliflower head and add to the pot
  • Sprinkle some salt and pepper over it
  • Add the vegetable stock to the rest of the items in the pot
  • Now cover the pot. Let it simmer for about 15 minutes
  • Meanwhile when the soup simmers, get ready with the garnishing. Take the garnish items in a sauté pan and melt the butter in a medium heating
  • Take the ginger and add it to the pan and toss it. Coat it with the butter
  • Then add the cauliflower garnish to the pan and then season it with the salt and pepper
  • Toss the cauliflower in the pan. This will evenly coat with the melted butter
  • Now place the pan and in the oven to prepare it for roasting
  • Continue roasting until it turns soft and brown
  • Now to the simmered soup add the coconut milk can and the lemon juice
  • Now season it with the salt and pepper and keep stirring
  • Now once the soup begins to simmer, remove it from heat
  • Puree the soup in a blender until this turns smooth.
  • Remove the garnish from the oven and now toss it with the fresh cilantro leaves

And you’re now ready to serve your mouthwatering curried cauliflower soup.
